What about your insurance?
This is where a lot of restaurant operators get caught off guard. Your commercial property and general liability policies almost certainly contain language about maintaining your fire suppression system in proper working order.
A documented deficiency that goes uncorrected creates a gap in that coverage. If a fire occurs while a known deficiency exists, your insurer has grounds to dispute the claim. The inspection report you file is the paper trail that either protects you or works against you.

How do you avoid deficiencies in the first place?
